Either early kill on the Dancer or wait until Irithyll and buy it off Greirat. The enemies outside of Vordt's arena only drop the Lothric Knight Sword, Spear and Shield plus the armour set. (The latter would be a long time before DS3. Greirat said he was quite notorious, so he probably was a thief for many years and had many heists. When does Greirat return? After you send him out to pillage for the first time. There's a few conditions but the first being after you defeat a boss. I'd look him up on the wiki if i were you as he can also die if certain conditions are not met. He should come back alive on his first excursion though.
